Sustainability, design and the future of food Lecturer: Elisha Tal "The world is like a spaceship run by cowboys." Kenneth Boulding in a provocative metaphor on the environmental crisis. Eating a hamburger in Tel Aviv is related to the burning of the rainforests in Brazil. Buying an avocado in San Francisco leads to a water crisis in Chile. A strawberry starts a world-wide journey just to rot in the fridge and from there to full garbage dumps. All this takes place in plastic packaging that eventually end up in a huge plastic island in the center of the ocean. During the course we will study sustainability issues to understand the source of the processes that lead to the environmental crisis. We will examine the designer's role in promoting sustainable solutions. We will focus on food and the crucial impact that growth, production, transportation, packaging, consumption, waste …..processes have on the environment. We will work on developing new solutions, promoting behaviour change, and proposing an alternative, material, moral and cultural vision.
